What is congee?
Congee is a silky, savory, rice porridge popular in many Asian countries.
How do you make congee?
Boil a little bit of rice in a big pot of water for a long time. The longer you boil, the more broken down the rice will become and the thicker the porridge will be. Most Asian cultures have their own unique version of rice porridge each with their own preparation techniques and ingredients. Congees made in various countries and regions may use different types of rice with different quantities of water, producing a porridge of different consistencies.
Why is it called congee?
It actually has different names based on where and how it was made. In China, congee is called “xifan” in Mandarin and “zhōu” in Cantonese. In Cambodia, congee is called “Khmer” and in Korea it is called “juk”. In the Philippines it goes by “lugaw” and it Vietnam, congee goes by “cháo”.
How do you eat congee?
Congee is often eaten with a variety of toppings added in. The more toppings the better! Some of our favorites are shredded chicken, Maitake mushrooms, pickled radish, and salted peanuts. The great thing about congee is it takes on the flavor of whatever you put in it - so don’t be afraid to try out there toppings (be adventurous, try some cheese)!

Congee & Me is a pop up restaurant concept founded by Arielle Chernin that serves traditional Chinese rice porridge with a modern twist. We are also available for private events, dinner parties, catering. At Congee and Me, we take the familiar Chinese comfort food and put our own twist on it, creating new traditions, favorites, and stories.
